Kale and Quinoa Pilaf


Cooking is one of my all-time fav things to do. I especially love cooking for others.
I was super-excited to find this recipe for a healthy Kale-Quiona Pilaf. Kale is super rich in anti-oxidants and Quinoa works great for protein purposes. I modified my version by roasting sunflower seeds with basil & thyme. I'm not a cheese eater so I passed on that. I also substituted red onion for scallions and used the zest and juice of a fresh orange & lemon. Deliciouso! Try it for yourself...
